One-Pan Dinner: Salmon, Green Beans & Potatoes

1

There are a lot of things I love about spring – flowers, thunderstorms, open windows and… veggies being in season! I love eating green beans raw, and springtime is when they get really good – especially here in Wisconsin. They are on my short list to plant in our garden this year, so I can’t wait to try this recipe again with homegrown beans!

We’re always looking for healthy, easy meals to make during the week and if you love beans and salmon, this is something that I would recommend trying!

What You Need

This recipe was for just Casey and myself – using only one pan, and it was the perfect amount of food + leftover veggies! You could make more, but you’d obviously need more than one pan, which would defeat the purpose. 😉

  • 2 Salmon filets (mine were marinated in lemon juice, olive oil, garlic, crushed basil and…

Your Opinion Doesn’t Matter

Shut It, Babe – SketcBook Pro for iPad (2017)

Have you ever met people who always be so fussy about whatever you do? Always think that their opinion is right and makes you feel unsure about what you do?

Sometimes you may hear something like: Why you seem so skinny? Oh are you gaining weight? You never post the picture with him again, are you guys done? Your style is so outdated! That blush color makes your cheeks look chubbier! You want to be an actor? Just enjoy the life you have now, don’t seek something impossible, darling. And… etc.

Wear those unmatched color outfits you like, gain weight, lose weight, get serious, or break up, be an actor/artist/musician do whatever things that suit you well. Their opinion doesn’t matter for you, you have your own choice so don’t let anybody control your decision with their opinion.

Maybe some people are…

Millennials: Entitled? Or Simply Screwed?

dont date(,) megan

Sometimes, as a Millennial, I get really resentful.  I get tired of the image of our generation being soft and entitled.  I’m tired of being told that we need to just “get on with it”.  This idea that we were simply given too many participation ribbons as children.

The fact is that the world has changed in the past decade… And Millennials are the fodder.

Tutitions began to rise and we came out  of university with record levels of debt.

Jobs, good and steady jobs, became a thing of the past, replaced by contracts that start and stop, and give very little security.

And, housing, dear God, housing.  In the Lower Mainland one can’t win.  Renting is too much.  Owning is too much.  We buy these little places, our small foothold into the market, and then can’t move up.

We put off marriage, babies, as we attempt to get a grip.

Stop taking relationship advice from men

I wish women would stop taking relationship advice from ‘men’. And by this I mean men who are unqualified. These men are not Counsellors, Psychotherapists’ or Psychologists. They don’t know JACK about you or your partner.  But they are perambulating as relationship experts on social media and even on TV. Some of them are labeling themselves as lifestyle coaches with little qualification to show.  And worst still, a lot of these men have terrible track records of being awful partners to very many women. And you know what? Some women are doing it now too, they are on Facebook live, Instagram live! Talking about how you ought to ‘do’ your man!

Don’t get me wrong we can learn so much from other people, but in my opinion the tell-tale signs of a fraud is when you hear their advice predominantly directed at the woman; cook more, serve him, kneel when you serve…

Beginner Budgeting Tips

Finance in Heels

How many time have someone has said that they couldn’t buy something whatever they want, but the next week or next Monday because it’s paycheck? (they are living paycheck to paycheck

I heard this sentence twice a week, and I don’t talk to a lot of people. This really makes me think that we should teach young adults more about budgeting than mathematic in school. And this makes me want to write this article. To help people like me before with no clue where to star and how to do a budget.

There is an epidemic of people just surviving paycheck to paycheck. I’m using the word surviving because that it’s what it’s, they’re surviving with what is left of their salary until the next one come. And this needs to stop, people need to stop living these ways.

“living paycheck to paycheck – it’s not really living anyway – it’s…

AMCARMEN'S KITCHEN

Hello Everyone! I can’t believe that it’s already the last day of March, meaning quarter of the year has just zoomed past in the blink of an eye! I felt like the first part of March went by really quickly for me, and the rest of the month just dragged on slowly to be honest. Maybe it was just because I spent the final week of my travels to New Zealand and Australia in the first week of March and the second week pouting about my post-vacation depression, and then of course dragging myself out of bed and to the office through the rest of March. I sound so pessimistic in this post in comparison to Wednesday’s post when I was all motivational and whatnot. Haha! I don’t mean to be pessimistic, I’m just stating the obvious lack of adventure in my life the moment I arrived back from my…

Is love an illusion?

The other day at work, my colleague and I were caught up in a discussion on love and relationships. While our conversation touched on everything from modern dating to the rising rates of divorce, she left me with a thought that latched to my mind and took the rest of the week to finally pry off. Just before grabbing her purse to leave she casually said; “I think love is just an illusion.”

This took me completely off guard. Love? An Illusion?! I found the concept simultaneously depressing and intriguing. But worst of all, highly probable. It sort of reminded me of that crumbling disappointment I felt when I was young kid and learned that Santa Claus wasn’t real. Even though the very idea of Santa seemed unlikely, I didn’t want to believe otherwise. Santa was a symbol of childhood innocence, and stubbornly believing he was real was like clinging to a buoy in an ocean of adulthood and…

Quick Guide: Renting vs. Buying

2

Spot

Are you thinking moving and not sure which route to take? To rent or own?

There are a few things to consider when trying to decide what works best for you and your family…

Are you financially ready?

If you’re buying, you’ll need a down payment to pay upfront that will fund the equity in the property that proves to lenders you’ve got skin in the homeowner game. The amount you’ll need varies, but the standard preferred amount is 20% and that often gets you the best rates.

When renting – in most cases – there’s no need for a hefty down payment. You may have to come up with a deposit, but it’s generally a lot less than the 20% usually required for buying.

Are you ready for monthly mortgage payments?

If you’re buying, this is the amount you’ll pay each month, which in most cases includes principal, interest (both of which are…
