National Fast Food Day is observed annually on November 16.  On this day each year people all across the country celebrate by going through the drive-thru, dining inside or ordering their fast food to go.

First popularized in the United States in the 1950’s, fast food is considered any meal with low preparation time and served to a customer in a packaged form for quick dine-in, take-out or take-away and typically with a drive-thru.

Following World War I, automobiles became popular and more affordable.  At that time drive-in restaurants were introduced.  In 1921,  White Castle, an American company founded by Billy Ingram and Walter Anderson in Wichita, Kansas, opened, selling hamburgers for five cents each.  Anderson had opened the first White Castle in 1916 as a limited menu, high-volume, low-cost, high-speed hamburger restaurant.

The United States has the largest fast food industry in the world.  There are American fast food restaurants that are located in over 100 countries.

Common fast food menu items include hamburgers and other sandwiches, fish, fried chicken, chicken nuggets, tacos, pizza, hot dogs, french fries, onion rings, breakfast biscuits, coffee and ice cream. 

The term fast food was first recognized in the dictionary by Merriam-Webster in 1951.

Directions

  • Preheat oven to 400 degrees F (200 degrees C). Grease muffin cups or line with muffin liners.

TODD’S FAMOUS BLUEBERRY PANCAKES

Ingredients

1 1/4 cups all-purpose flour

1/2 teaspoon salt

Directions

  • In a large bowl, sift together flour, salt, baking powder and sugar. In a small bowl, beat together egg and milk. Stir milk and egg into flour mixture. Mix in the butter and fold in the blueberries. Set aside for 1 hour.

Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

INGREDIENTS

  • 4 bananas, peeled and sliced (NOT overly ripe)
  • 1 cup oats, pulsed through a food processor until coarse flour forms
  • ¼ cup + 2 tablespoons whole wheat flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ¼ teaspoon cinnamon
  • ⅛ teaspoon nutmeg
  • ½ cup half and half
  • ¼ cup Greek yogurt
  • 2 eggs
  • 5 tablespoons melted butter
  • 2-3 tablespoons raw honey or real maple syrup
  • 1 teaspoon vanilla extract

For the topping

  • ⅓ cup oats
  • 1 tablespoon melted butter
  • 1 tablespoon raw honey or real maple syrup

INSTRUCTIONS

  • Preheat the oven to 400 degrees. Slice the bananas into rounds. Line a baking sheet with aluminum foil and spray generously with nonstick cooking spray. Place the bananas on the baking sheet and bake for 5-10 minutes, flipping once and removing from the oven when the bananas are deep golden brown on the outside. Transfer to a bowl and mash the bananas with a wooden spoon.
  • Break down the oats in a food processor until a flour-like meal is formed. This should yield a little more than ¾ cup. Combine the oat flour, whole wheat flour, baking powder, salt, cinnamon, and nutmeg in a large bowl. Stir to combine.
  • In a separate bowl, whisk the half and half, Greek yogurt, eggs, melted butter, vanilla, and honey until smooth. Make a well in the dry ingredients and add the wet to the dry. Stir around the bowl just 10 times until the batter is just barely combined (if you stir too much during this step, your muffins are going to have a gummy, chewy consistency). Fold the caramelized bananas into the mixture, stirring just 5 more times.

Transfer the batter to a greased 6 or 12 cup muffin tin. Mix the topping ingredients together and spoon over the muffins. Bake for 10-15 minutes, until the muffins are puffed slightly and spring back when you touch the tops.

QUICK DOUBLE CHOCOLATE CUPCAKES

INGREDIENTS

1 box devil’s food cake mix, such as Duncan Hines Moist Deluxe

1/2 cup vegetable oil

3 eggs

1 cup mini semisweet chocolate chips

2 to 3 cups White Faux Buttercream, recipe follows, colored or swirled with your favorite color

Cupcake Toppings:

Licorice whips

Crushed peppermint candies

Crushed lemon drops

Multicolored jimmies or nonpareils

Mini white and dark chocolate chips

Small chocolate candies

Colored decorating sugars

Cereals such as corn pops, fruit rings or graham cracker cereal squares

White Faux Buttercream:

3 sticks (12 ounces) unsalted butter, at room temperature

4 cups confectioners’ sugar

3 tablespoons whole milk, at room temperature

2 teaspoons vanilla extract

Food coloring, such as yellow, blue and red, or your favorite, if desired

DIRECTIONS

Preheat the oven to 350 F. Line two 12-cup standard muffin tins with paper cupcake liners and set aside.

In a bowl, using an electric mixer, mix the cake mix, 1 1/3 cups water, oil and eggs on medium speed until moistened and smooth. Stir in 3/4 cup chocolate chips. Divide the batter evenly among the muffin cups, stirring it occasionally to redistribute the chocolate chips. The batter will nearly fill each liner to the top. Evenly sprinkle the remaining 1/4 cup chocolate chips over the tops of the cupcakes. Bake until the cupcakes spring back when lightly touched, or a toothpick inserted in the center comes out clean, about 20 minutes. Transfer to a rack to cool.

When cool, put the White Faux Buttercream out with spoons or small spatulas along with bowls of the cupcake toppings for the kids to decorate their own cupcakes.

In the bowl of a stand mixer, using the paddle attachment, whip the butter on high speed until very soft. Meanwhile, place a large sheet of parchment paper on a work surface. Using a large sifter, sift the confectioners’ sugar onto the parchment. This helps prevent clumping and makes the mixing easier. Lower the speed of the mixer and, using the parchment as a funnel, pour half the sugar into the bowl and mix slowly until combined. Add the milk and mix until combined. Once combined, add the remaining sugar with the vanilla and mix. Once it is combined, turn the mixer speed up and beat the icing until very light and fluffy, 3 to 4 minutes. If desired, divide the icing into smaller batches and color with food coloring.

Spread the icing on cooled cupcakes while at room temperature. Refrigerate any leftover icing, but be sure to let it come back to room temperature before using. Re-whip the icing to make it fluffy again. Makes 4 cups (enough for 24 cupcakes).

Yield: about 8 cups, enough for at least 6 dozen cupcakes

3 tablespoons Maker’s Mark® Bourbon3/4 pound bacon, 1/4-inch dice*2-1/2 cups all-purpose flour1/4 teaspoon baking powder1 teaspoon baking soda1 teaspoon salt1/2 cup unsalted butter, softened1/2 cup reserved bacon fat, chilled3/4 cup granulated sugar1/2 cup packed light brown sugar1/4 cup packed dark brown sugar1 teaspoon vanilla extract2 large eggs8 ounces dark chocolate, chopped into small pieces**

In a large sauté pan, cook out the diced bacon until the bacon pieces are golden and crisp.Remove the bacon pieces from the fat and drain on a paper towel.Strain the fat through a fine sieve and measure out a 1/2 cup of bacon fat and chill the bacon fat until it congeals and is set.Preheat the oven to 375°F.Combine the flour, baking powder, baking soda and salt in small bowl.Beat the butter, chilled bacon fat, granulated sugar, light and dark brown sugars, vanilla and Maker’s Mark®Bourbon in large mixer bowl until it is well combined.Add the eggs one at a time, beating well after each addition; gradually beat in the flour mixture.Stir in the cooked bacon pieces and chopped chocolate bits.Drop by rounded tablespoon onto parchment-lined baking sheets at least 3 inches apart.Bake in the oven for 9 to 11 minutes or until golden brown.Let stand for 2 minutes; remove to wire racks to cool completely.Keep in a dry, airtight container for up to 5 days.* A fattier sliced bacon is preferred, as lean bacon and turkey bacon will not work for this recipe.** Use a dark chocolate with 65% cocoa or higher. Anything from a 65%-85% chocolate will work well.
