Bacon Cheddar Waffles & Eggs with Smoked Ham and a Cherry Pepper Hollandaise

Savory bacon and cheddar waffles with sliced smoked ham, a sunny side up egg and a cherry pepper hollandaise. Perfect for breakfast, brunch or dinner!

I was inspired to make this by Loring Place in New York City. It makes a delicious flavor combination.

Delish had a great recipe for bacon cheddar waffles that I followed.

For the (light version) cherry pepper hollandaise:

Diced cherry peppers
3 ounces (6 tablespoons) light or reduced-fat cream cheese
1 teaspoon lemon juice
½ teaspoon Dijon mustard
¼ teaspoon kosher salt or coarse sea salt

Add the cream cheese, lemon juice, mustard, and salt to a blender. Puree until the sauce is silky smooth. Stir in the diced cherry peppers.

Beauty is transcendent. One should no more attempt to possess and own a beautiful object, idea, mind or person than one should attempt to bottle an ocean wave; a jar full of simple salty water is never again quite the same as the turbulent wilderness of its source. When we ourselves become owned by a beautiful idea (and what is beauty in essence, other than an idea or a perception of mind ?) we often enough fail to see that in aspiring to own, we ourselves become owned by the idea of that thing we initially sought to capture, to possess. To appreciate the beauty and symmetry of an idea or concept is enough for me – I do not need to own anything. One does not need to own a work of art to truly or fully understand or appreciate the deep beauty of its message.

Hello again, friends! I hope everyone enjoyed their extended holiday weekend, we certainly did! Tikki got a surprise visit from his Nana & Poppa, it completely made his day. He always gets so excited when people visit, especially when Nana & Poppa visit.

Anyway, let’s talk about meatballs, since that’s what we’re making today.  When I make meatballs (and all Italian food really) it floods my mind with memories of my grandmother cooking and her teaching me how to cook. It also brings up memories of her cussing me out in Sicilian for tasting the food too often, I mean can you blame me? That shit was delicious!
