Bacon Cheddar Waffles & Eggs with Smoked Ham and a Cherry Pepper Hollandaise

Savory bacon and cheddar waffles with sliced smoked ham, a sunny side up egg and a cherry pepper hollandaise. Perfect for breakfast, brunch or dinner!

I was inspired to make this by Loring Place in New York City. It makes a delicious flavor combination.

Delish had a great recipe for bacon cheddar waffles that I followed.

For the (light version) cherry pepper hollandaise:

Diced cherry peppers
3 ounces (6 tablespoons) light or reduced-fat cream cheese
1 teaspoon lemon juice
½ teaspoon Dijon mustard
¼ teaspoon kosher salt or coarse sea salt

Add the cream cheese, lemon juice, mustard, and salt to a blender. Puree until the sauce is silky smooth. Stir in the diced cherry peppers.

  1. Nice! I don’t think I would have thought of adding hollandaise, though. That’s the thing that makes this totally different from the normal boring old waffles/eggs cheese sort of thing. Cherry peppers, though… hmmm. I’ll think on this one.

  2. An hour and a half from home and you show me this? Nice. So I had a great lunch, just a dab of leftover fried rice and a little fruit, and I was satisfied. Now, I may have to go to Mums (and do some work) and have a mum-cooked meal. She’s an excellent cook, taught me everything I know, and makes better gravy than I can. So far. But it’s different, because she thinks of it when there are pork chops and baked potatoes, and I only remember to make it when it’s pork sausage.

    My son wants me to master fresh Hollandaise sauce. I know how, I just wasn’t ever keen for it. He makes some excellent food, when I can get him to cook for me. (Not that I’m proud of teaching him or anything.) He’s probably a “super-taster” like his mom. I’m just trained on what goes together, and I can usually taste it in my head before I assemble it. I think most cooks can do that though.
