Cheesy Baked Tortellini

CHEESY BAKED TORTELLINI BY GIADA DE LAURENTII  

Ingredients
Olive oil
2 cups marinara sauce
1/3 cup mascarpone cheese
1/4 cup chopped fresh Italian parsley leaves
2 teaspoons chopped fresh thyme leaves
1 pound purchased cheese tortellini
2 ounces thinly sliced smoked mozzarella
1/4 cup freshly grated Parmesan

Directions
Preheat the oven to 350 degrees F. Lightly oil an 8 by 8 by 2-inch baking dish.

Whisk the sauce, mascarpone cheese, parsley and thyme in a large bowl to blend. Cook the tortellini in a large pot of boiling salted water until just tender, about 2 minutes. Drain. Add the tortellini to the sauce and toss to coat. Transfer the tortellini mixture to the prepared baking dish. Top the mixture with the smoked mozzarella and Parmesan. Cover and bake until the sauce bubbles and the cheeses on top melt, about 30 minutes.

Valentine’s Day is less then a week away and whether or not you like celebrating the day for lovers or haters, we have a list of romantic movies that you can enjoy or cry by yourself or with your significant other. You might consider these films more then romantic flicks because each film captures a moment of time when we were in a different place or mind frame about our relationships. Back in high school watching Gone with the Wind in class, I thought this was the most boring and dull movie I have ever seen. But now in my thirties watching Gone with the Wind is a joy because it’s a classic. We have comprised a list in no particular order, the most romantic films of all-time. Some films on the list you might have seen more then once and some films you have never seen before because you thought it was too cheesy. So, grab that box of Kleenex and that gallon of ice cream and cuddle up with him or her or Fido.

So Rose is an actress in the 1920s, and now 84 years later Rose Calvert is 100 years old and tells her granddaughter Lizzy Calvert, Brock Lovett, Lewis Bodine, Bobby Buell and Anatoly Mikailavich the whole story from departure until the death of Titanic on its first and last voyage, and then to Rose all Titanic and the real love of her life Jack Dawson is all an existence inside of her memory, and Titanic is to rest in peace at the bottom of the North Atlantic from 1912 until the end of time.

I know for me and many other dudes, February 14th is not the happiest day of the year. I’ve been in several relationships where I had to plan out and think about the perfect gift for her. Usually, I waitied until the day of to find that not so special gift, like your typical red flowers, a box of chocolates in a heart shaped box and your standard “Dick in a Box” gift. (My own dick if your wondering)  I have to admit it, I was a lazy and uncaring boyfriend. Shocker, maybe not. Maybe this is the reason why I have been in several relationships because I didn’t care all the time. Trust me, there have been many of nights on the side of the road, trying to convince my girlfriend I had at that time to stop crying and get back in the car.

But fortunately, this article is not about “how fucked up I am?” Or how not to act in a relationship. This is an article about the facts and history about the day that many people actually love, Valentine’s Day. So get all the facts before you decide if you like Valentine’s Day or not.

History

There are various theories on the origin of Valentine’s Day, but the most popular dates back to the time of the Roman Empire during the reign of Claudius II, 270 A.D. Claudius didn’t want men to marry during wartime because he believed single men made better soldiers. Bishop Valentine went against his wishes and performed secret wedding ceremonies. For this, Valentine was jailed and then executed by order of the Emperor on Feb. 14. While in jail, he wrote a love note to the jailor’s daughter, signing it, “From your Valentine.” Sound familiar?

The ancient Romans celebrated the Feast of Lupercalia on Feb. 14 in honor of Juno, the queen of the Roman gods and goddesses. Juno was also the goddess of women and marriage.

Many believe the X symbol became synonymous with the kiss in medieval times. People who couldn’t write their names signed in front of a witness with an X. The X was then kissed to show their sincerity.

Girls of medieval times ate bizarre foods on St. Valentine’s Day to make them dream of their future spouse.

In the Middle Ages, young men and women drew names from a bowl to see who would be their Valentine. They would wear this name pinned onto their sleeves for one week for everyone to see. This was the origin of the expression “to wear your heart on your sleeve.”

Tasty Vegan – Spicy BBQ Chickpea Burgers & Lightened-Up Crispy Baked Fries Recipe

Ingredients:

  • 1 cup dry/uncooked chickpeas (or 2 & 1/4 cups cooked chickpeas) + kombu (optional)
  • 1/2 cup dry brown rice (or 1 & 1/4 cup cooked rice)
  • 3 tbsp sunflower seeds + 1 tbsp pepita seeds, toasted
  • 2 large garlic cloves, minced
  • 1/2 cup diced red pepper
  • 1 jalapeno, seeded and diced
  • 1/4 cup diced red onion
  • 1 small carrot, grated
  • 1/4 cup minced fresh parsley
  • 3 tbsp BBQ sauce
  • 1/4 cup breadcrumbs, or more as needed (use GF breadcrumbs if necessary)
  • 2-3 tbsp ground flax
  • 1/4 tsp red pepper flakes
  • Fine grain sea salt, to taste (I used 1 tsp + Herbamare)

1. Methods to prepare chickpeas: 1) Soak dry chickpeas overnight, or for at least 8 hours, in a large bowl filled with water. When ready, drain and rinse the chickpeas. Place in a medium-sized pot with 3 cups of fresh water. Cover with lid and bring to a boil. Remove lid and place a small piece (~1” x 2”) of kombu (optional) into the pot with 1/8th tsp salt. Cover again and simmer on low-medium for about 50 minutes, watching carefully after about 35-40. When cooked, chickpeas will be tender and some may have split open. Drain and rinse. Discard kombu. 2) Alternatively, you can use canned chickpeas or 3) the quick-soak method: Add 3 cups water and 1 cup dry chickpeas into a pot. Cover, bring to a boil, and immediately turn heat off. Keep covered and let sit for 1 hour. After 1 hour, drain and rinse chickpeas. Add into rinsed pot with 3 cups fresh water. Cook the same as method 1) above.

2. To cook rice: In a strainer, rinse the rice. Add 1/2 cup dry rice into a pot with 1 cup water. Bring to a boil. Reduce heat to low, cover with lid, and simmer for about 25-30 minutes, watching closely and giving it a stir after 20. Add a touch more water if necessary.

3. Toast seeds: Preheat oven to 300F. Toast sunflower and pepita seeds for about 12 minutes, or until lightly golden in colour. Set aside.

4. Chop vegetables. Finely chop the garlic, peppers, onion, and parsley. Grate carrot. Stir in half the salt. Set aside.

5. Mash chickpeas and rice: When chickpeas are ready, drain and rinse. Add the cooked chickpeas and rice into a large bowl. Make sure your rice is HOT as it helps it stick together and bind. Do not use cold rice. With a potato masher, mash very well, leaving some chunks for texture. You will need to use a lot of elbow grease to mash this up, but you want it really sticky so it’s worth it! You can also pulse in a food processor.

6. Mix it all up: Preheat a large skillet over medium-high heat. With a wooden spoon, stir in the chopped vegetables into the mashed chickpea/rice mixture. Now stir in the seeds, BBQ sauce, breadcrumbs, and ground flax. Add the salt and red pepper flakes to taste.

7. Shape patties & cook: Form 6-8 patties and pack dough together tightly. Spray the preheated skillet with oil. Cook the patties for about 4-5 minutes per side over medium-high heat (time will vary based on your temp). Burgers should be browned and firm when ready. You can also try grilling the patties (try pre-baking patties for 15 mins in the oven at 350F before grilling).

I’ve been trying to write pretty. I like writing pretty because of how it makes me feel. I’ve gotten some out and got some in the works.

I was working on something I believe will be pretty epic. Haven’t decided yet if the piece is going to end exhilarated or tragic. Where it is I can go either way. The certainty of the piece is that there is going to be a hell of a lot of pain.

The world keeps showing up and I find myself obligated to look and read and participate. What else anyone does or doesn’t do, their own volition. Me, I do what I can. What I can do is use my weapons of mass persuasion and drop in to the conscience of those that read me the things that blew me out of my pretty mode.

Yesterday (January 14, 2016) my notification bubble came up as I was writing. I could see who it was from and the subject. The email came from someone close and the subject was, “Upsetting”. The sender gets responses from me quickly. The person is on my you aren’t a disturbance list and always will be.

The note came from a friend on the Dark Continent. I read and looked at what I was given and things including my mood got a whole lot darker real fast.

What I read was disturbing enough. What I saw was, I can’t even find a damn word to describe what I felt when I saw. Thing is, from where it came from I knew it was real. What I saw wasn’t a prop for some horror film. I am so angry. Writing in to here I am still so angry. This isn’t the worst trip I’ve been on but is right fucking up there.

It was real. It is real. This and more are real. I am compelled to have you share the reality with me.

You see the thin rope tied around the paw. The belief is that the paw was used by Sangoma in a ritual that has to do with someone having financial difficulties, bankruptcy or poverty.

Someone pays the Witch Doctor to change their fortunes. You just saw what price the animal pays.

How’s that for reality? This is not gleaned information to create a tug on your heart strings piece.

My friend tells me what you just saw is a very common thing over there. Africans paying Sangomas to cast spells.

What you’ve seen isn’t even as disgusting and sickening as this tale is going to get.

I keep finding myself having to go back and edit far more than I usually do. I’m having a difficult time with composition. Telling a story well takes a certain amount of detachment no matter how attached you are personally. This shit does get my anger meter rising fast.

I’m big time attached. I’m big time angry and I’m big time questioning why the 1st World continues to help the 3rdWorld when they simply refuse to clean up their shit. They want our money. They want our expertise. They want our help removing their despots. Yet the shit that angers the 1st word goes on without what appears to be any consideration for the ways of the 1st world.

There is some sense of entitlement and I’ve been told about it. Told about it in the sense of 2 friends having a conversation. Me with 1st world perspectives and my friend with 3rd world perspectives.

I’m fully aware that the 1st world isn’t lily white in our dealings and some will grease the skids for easier access. We in the 1st world will also bring ours involved in corruption to task when we catch them. The 3rd world is more understanding, lenient, an acceptable cost of doing business.

The rest of this story gets even more gruesome. Nothing like a little human harvest to set the nightmare scene is there. Not a question.

Maybe a lighter mood? A joke to put you in the giggle groove?

So a wife walks in to the kitchen to make dinner, opens up the fridge and looks inside. Much to her surprise all there is to make are human hearts and other human organs. Quite the dream scream.

True story and yes I do know how and why those body parts got in the fridge. The upside if there is an upside, those body parts weren’t taken from anyone who was using them at the time. The harvesting of organs for sale to Sangomas.

Sangomas use body parts to make the traditional healing and it is in many cases deadly. They don’t tell you that part.

Many Africans hate the Sangoma while others believe. Ignorance doesn’t seem to be an issue. They’ve been told and shown different and the practice goes on. There are many of all colours that believe there should be no mercy shown to those that commit the barbarian acts.

I’ve used words and feelings from my friend in this narrative. It would have been an injustice to not use what was gifted to me.

Children. You didn’t think this witchy wonder was going to end with just body parts of the dead did you? Not my style to just stick it in without twisting it. So here’s the twist.

I’m told I wouldn’t believe the number of times children disappear only to be found dead with body parts and organs removed. I was told sometime back that children are raped by those with AIDS who believe that sex with a virgin will cure them.

My friend also tells me that the Sangoma are like drug dealers, take one down and there is always another showing up to take their place.

Recently the Government of my country committed 2.4 Billion dollars to Africa for climate control. I’m sure you’ll excuse me for believing they are worrying about the wrong fucking climate.

Always observed on February 11th, National Make A Friend Day is a wonderful opportunity to meet someone new and make a new friendship.  Friends serve a very important role in everyone’s lives.  They are one of life’s most valuable assets.

toddler managed to make people’s tedious supermarket shop a bit more entertaining with a simple happiness trick.

In a bid to make everyone smile, 16-month-old Joey wandered throughout the aisles waving and engaging with strangers while a guardian closely followed behind her. 

And of course, the majority of people couldn’t resist giving the young girl a smile and wave back.

Emotional Intelligence by Primrose Path (BLW Contributor)

This evening my friend and I attended an emotional intelligence seminar hosted at the university. First, in case some are not familiar with the idea of emotional intelligence, I will explain the basic concept. Emotional intelligence (EI or EQ – emotional quotient) is essentially recognizing your own emotions as well as others . The ability to differentiate between them an act accordingly. While this may sound like a very basic concept, it’s surprising to learn how many people are not emotionally intelligent or even conscious of trying to be so. A lot of our every day conflicts with others is simply based on the fact that we are not acting emotionally intelligent. It became apparent to me very quickly in my therapy sessions that I was confusing emotions very often in relationships, whether it was friendships, work environments or intimate relationships. EI or EQ is becoming aware of yourself, self realization. When experiencing a conflict, I was taught how to – instead of reacting to situations – to respond to them. I was shown how to identify emotions properly, and in turn approach conflict properly. Instead of becoming defensive, apprehensive or aggressive in a situation, I began to explain to myself what I was actually feeling and where it was stemming from. Again, in turn, I was able to explain these feelings and ideas to the people involved, thus finding a resolution efficiently and calmly. No more of this “arguments going no where” feeling. I can tell you right now, that a lot of it came directly from fear. Fear turned into anger. It wasn’t long before I realized that my angry persona was just fear protecting itself. The emotional intelligence seminar this evening reiterated the fact that I realized just last week, that I need to become more conscious of my emotions again and practice what I learned during my therapy sessions once more.

To move onto the act of becoming more emotionally intelligent, these are some things I took away from the seminar:

  1. Become socially aware. Be involved in events or things in your environment and community.  Think of how it makes you feel.
  2. Manage your stress by acknowledging that it exists. No one is perfect and stress will get the better of us all at times, but try to actively be aware of triggers and ways to cope with stressful situations.
  3. If you are someone who needs new connections, go out there and make them.
  4. If you are someone who needs alone time, make time for you.
  5. Have courage. Courage can be big or small, some days are more courageous than others.
  6. Do the right thing. Most times, you’ll feel it in your gut.
  7. Move forward. Don’t stay stagnant, or your situations will too.
  8. Care about something bigger than yourself.
  9. Look at the big picture. Sometimes we tend to focus in on small points of the picture and can get somewhat lost, take a step back and find what is ultimately important to you.
  10. Be aware of how you come across to others, be approachable but don’t be a door mat.
  11. Listen to hear – not to reply.
  12. Find your best qualities and strengths.
  13. Be authentically you.
  14. Grow by experiencing new things.
  15. Love yourself, but stay humble. No one respects arrogance.
  16. Don’t be defensive. If you’ve encountered a difficult situation with someone or something, identify the situation, address the problem without simply pointing fingers, find out what your common goal is and work towards that common goal.
  17. Lastly, give yourself permission to not take it all on at once.

The  concept of emotional intelligence is to use this every day to communicate with the world around you.  Communication is so vital, but so many of us are doing it wrong. We may not know this, and it is not always malicious, but it’s true. So if you are struggling with emotions, mental illness or relationships of any kind, please take into consideration exploring your own emotional intelligence. It may just open more doors and make your life a lot easier.

Nobody is saying the wonders of modern medicine—what would we do without a medication like penicillin to treat infections? But, as it turns out, everyday items have secret curing powers, too. Next time you don’t want to fork over money to get a common wart removed, consider using duct tape. Already popped two aspirin but can’t get rid of the headache? A pencil could do the trick. Below, get medical explanations behind a few bizarre—albeit brilliant—MacGyver-esque home remedies.

DUCT TAPE TO REMOVE WARTS

In 2002, a group of doctors compared duct tape’s effectiveness with liquid nitrogen in removing warts. After two months of wearing duct tape on a daily basis and using a pumice stone about once a week to exfoliate the dead skin, 85 percent of patients’ warts were gone, whereas freezing only removed 60 percent. “The question is whether there is something in the chemical adhesive itself, or if the occlusion (suffocation) causes the destruction of the wart,” says New York City–based dermatologist, Robin Blum, MD. “The other thinking is that the duct tape causes irritation, which stimulates our body’s immune cells to attack the wart.”

VAPOR RUB TO CURE NAIL FUNGUS

While there are no studies to prove coating infected toenails with vapor rub once or twice a day is an effective treatment for nail fungus, a basic Internet search results in a number of personal testaments to the medicinal ointment’s fungus-killing powers. “I’ve heard many patients say that vapor rub does help, but I’m not exactly sure why,” Dr. Blum admits. While some argue it’s the menthol in the balm that kills the fungus and others say it’s the smothering effect of the thick gel, if used consistently, vapor rub has been shown to get rid of not just the fungus, but the infected toenail, too, which will turn black and eventually fall off. When the new nail grows in, it should be fungus-free.

OATMEAL TO SOOTHE ECZEMA

“This is absolutely true, as oats have anti-inflammatory properties,” Dr. Blum says. Whether it’s used as a paste or poured into a bath, most experts recommend choosing colloidal (finely ground) oatmeal and soaking the affected area for at least 15 minutes. In addition to reducing inflammation, oats are thought to have an antihistamine effect, Dr. Blum says. By lowering levels of histamine, which triggers inflammation as part of the immune system’s recovery response, she explains, oats prevent or reduce the redness.

YOGURT TO CURE BAD BREATH

Bad breath comes from a number of places, the two most common being the mouth and the stomach. The neutralizing powers of yogurt and other probiotics treat the latter cause. “Yogurt shouldn’t have any effect at all on the bacteria that live on the tongue because it’s not there long enough,” says Robert Meltzer, MD, a New York City–based gastroenterologist and attending physician at Lenox Hill Hospital. However, it likely has a neutralizing effect on the acid that resides anywhere between the mouth and the stomach, including the back of the throat and the esophagus, he explains. “I think almost any milk product or food that contains live cultures would have the same effect.” While yogurt can get rid of bad breath that results from gastrological conditions, like acid reflux, it won’t have any real effect on bad breath that is the product of gum, liver or lung disease, says Ohio-based dentist Matthew Messina, DDS.

A SPOONFUL OF SUGAR TO CURE HICCUPS

In 1971, Edgar Engelman, MD, conducted a study to find out if a spoonful of sugar really is an effective cure for hiccups. He assembled a group of 20 patients who had been experiencing intractable hiccups for more than six hours, eight of whom had had them anywhere from a full day to six weeks. Each of the test subjects was given one teaspoon of white granulated sugar to swallow dry, and for 19 of the 20 hiccup patients, the cure was immediate. André Dubois, MD, a gastroenterologist in Bethesda, Maryland, noted in The Doctors Book of Home Remedies that “the sugar is probably acting in the mouth to modify the nervous impulses that would otherwise tell the muscles in the diaphragm to contract spasmodically.”

BITE A PENCIL TO CURE A HEADACHE

While doctors aren’t sure why we do it, clenching our teeth is a common side effect of stress. According to Fred Sheftell, MD, director of the New England Center for Headache in Stamford, Connecticut, when we clench up, we strain the muscle that connects the jaw to the temples, which can trigger a tension headache. By placing a pencil between our teeth—but not biting down—we relax our jaw muscles, which eradicates tension and reduces pain. Just remember, the remedy really only applies to tension headaches—not migraines or headaches caused by sinus pressure, etc.

OLIVES FOR MOTION SICKNESS

According to the National Library of Medicine, there are a number of symptoms that present themselves as a result of motion sickness, including increased salivation, which is the body’s way of protecting the teeth from the high doses of acid accompanied by vomit. Enter olives, which contain tannins that, when released in the mouth, work to dry saliva—first eliminating the symptom and then the body’s instinct to follow suit. However, the treatment is only effective during the early stages of nausea, when the salivation changes first appear.

GARGLE SALT WATER FOR A SORE THROAT  

When you were a kid and had a sore throat, your mom likely made you gargle warm water with salt in it…and she was definitely on to something. According to Douglas Hoffman MD, PhD, author of the website The Medical Consumer’s Advocate, a sore throat is an inflammatory response of the infected tissues, and the salt helps draw out the excess fluid to temporarily decrease swelling and the pain it causes. Most remedies call for a ratio of 1 tablespoon salt to 8 ounces of water, but it’s always better to opt for more salt rather than less. Just keep in mind that you are treating the symptoms—not the illness. As Dr. Hoffman notes on his website: “The relief is very real, but also tends to be short-lived, since the gargle has done nothing to remove the cause of the sore throat.”

You are what you’re feeling- The Effects of Negative Emotions on our Health

Humans experience an array of emotions, anything from happiness, to sadness to extreme joy and depression. Each one of these emotions creates a different feeling within the body. After all, our body releases different chemicals when we experience various things that make us happy and each chemical works to create a different environment within the body. For example if your brain releases serotonin, dopamine or oxytocin, you will feel good and happy. Convexly, if your body releases cortisol while you are stressed, you will have an entirely different feeling associated more with the body kicking into survival mode.

What about when we are thinking negative thoughts all the time? Or how about when we are thinking positive thoughts? What about when we are not emotionally charged to neither positive nor negative? Let’s explore how these affect our body and life.

POSITIVE VS. NEGATIVE

Is there duality in our world? Sure, you could say there is to a degree, but mostly we spend a lot of time defining and judging what is to be considered as positive and what we consider to be as negative. The brainis a very powerful tool and as we define what something is or should be, we begin to have that result play out in our world. Have you ever noticed, for example that someone driving can get cut off and lose their lid, get angry and suddenly they are feeling negative, down and in  bad mood? Whereas someone else can get cut off while driving and simply apply the break slightly and move on with their day as if nothing happened. In this case, the same experience yet one sees it as negative while the other doesn’t. So are things innately positive and negative? Or do we define things as positive and negative?

CUT THE PERCEPTIONS AS MUCH AS POSSIBLE

After thinking about it for a moment you might realize that there are in fact no positive or negative experiences other than what we define as such. Therefore our very perception of an experience or situation has the ultimate power as to how we will feel when it’s happening and how our bodies will be affected. While we can always work to move beyond our definitions of each experience and move into a state of mind/awareness/consciousness where we simply accept each experience for what it is and use it as a learning grounds for us, we may not be there yet and so it’s important to understand how certain emotions can affect our health.

MIND BODY CONNECTION

The connection between your mind and body is very powerful and although it cannot be visually seen, the effects your mind can have on your physical body are profound. We can have an overall positive mental attitude and deal directly with our internal challenges and in turn create a healthy lifestyle or we can be in negative, have self destructive thoughts and not deal with our internal issues, possibly even cloak those issues with affirmations and positivity without finding the route and in turn we can create an unhealthy lifestyle. Why is this?

Our emotions and experiences are essentially energy and they can be stored in the cellular memory of our bodies. Have you ever experienced something in your life that left an emotional mark or pain in a certain area of your body? Almost as if you can still feel something that may have happened to you? It is likely because in that area of your body you still hold energy released from that experience that is remaining in that area. I came across an interesting chart that explores some possible areas that various emotions might affect the body.

When you have a pain, tightness or injuries in certain areas, it’s often related to something emotionally you are feeling within yourself. At first glance it may not seem this way because we are usually very out of touch with ourselves and our emotions in this fast paced world, but it’s often the truth. When I’ve had chronic pains in my back, knees, neck or shoulders, it wasn’t exercise, physio or anything in a physical sense that healed it, it was when I dealt with the emotions behind it. I know this because I spent the time and money going to physio and even though I wanted and believed I would get better, something wasn’t being addressed still. The more I addressed the unconscious thought pattern and emotions throughout my body, the more thins loosened up and pain went away.

When you get sick or are feeling a lot of tightness and pain, often times our body is asking us to observe yourself and find peace once again within yourself and your environment. It’s all a learning and growing process we don’t have to judge nor fear.

YOU HAVE THE POWER

Davis Suzuki wrote in ‘The Sacred Life’, ‘condensed molecules from breath exhaled from verbal expressions of anger, hatred, and jealousy, contain toxins. Accumulated over 1 hr, these toxins are enough to kill 80 guinea pigs!’ Can you now imagine the harm you are doing to your body when you stay within negative emotions or unprocessed emotional experience throughout the body?

Remember, you have all the power in you to get through anything life throws at you. Instead of labeling with perception the concepts of negative and positive as it relates to each experience you have in your life, try to see things from a  big picture standpoint. Ask yourself, how can this help me to see or learn something? Can I use this to shift my perception? Clear some emotion within myself? Realize something within another and accept it? Whatever it may be, instead of simply reacting, slow things down and observe. You will find you have the tools to process emotions and illness quickly when you see them for what they are and explore why they came up. If you believe you will get sick all the time, and believe you have pain because it’s all out of your control, you will continue to have it all in an uncontrollable manner until you realize the control you have over much of what we attract within the body.
